How we craft
See how we hand make our jams, marmalades and curds.
We source all our strawberries, raspberries and blackcurrants from the berry fields of eastern Scotland.
The strawberry plant, along with its good friend the raspberry plant, are members of the rose family.
The temperate climate in Scotland allows for the fruit to be grown for longer, resulting in stronger flavours. We only ever use whole berries in our preserves, for a great tasting product.
We only use the finest quality ingredients in our preserves and marmalades. All our bitter oranges for our marmalades come from Seville - the home of the marmalade orange.
In Mexico, Seville oranges are eaten cut in half, salted and coated with a paste of hot chilli peppers.
Rather than granulated sugar we use pure cane sugar in our preserves, marmalades and curds to make a great tasting product.
Our steam heated copper pans use a rolling boil method. The fruit and sugar is slowly boiled allowing the flavours to be released before gradually setting.
One of the first recorded mentions of jam making dates back to the Crusades. The soldiers brought the process back from their travels in the Middle East.
We use copper because its the best metal for conducting heat and steam because it gives the most even temperature. The copper pans are made locally, near Dundee, Scotland because we believe in supporting local craftsmanship.
To create the perfect home-cooked flavour we put a great deal of care and attention into judging exactly when our products are ready.
When making jam at home, don’t try to make too large a quantity in one go. It will take far too long to come to the boil, and then will not boil rapidly enough to produce a good set.
We taste the product once it’s cooked to ensure every jar has the home-made taste you expect from Mackays.
Our range of marmalades, preserves and curds are available across the USA in a number of major retailers including Cost Plus World Market, Kroger, Safeway, Sprouts Farmers Market and Whole Foods. You’ll also find our products in smaller, specialist food stores or you can buy online at mybrands.com
