Bucks Fizz Muffins

A great recipe, which children can help with. Perfect for breakfast with freshly ground coffee!


8oz Plain Flour

3oz Porridge Oats

2 teaspoons Baking Powder

Pinch of Bicarb of Soda

Pinch of Salt

3oz Caster Sugar

1 Egg

1 cup Milk

12oz Jar Mackays Orange Marmalade with Champagne

6 teaspoons Vegetable Oil

Topping - approx 2 teaspoons each Porridge Oats & Demerara Sugar

  1. Sift together all dry ingredients in one bowl.
  2. In another combine all wet ingredients, including the marmalade.
  3. Pour wet into dry and mix until just combined.
  4. Spoon into muffin cases to around ¾ full and sprinkle the tops with porridge oats and demerara sugar.
  5. Bake at 392F for 25 minutes until tops are lightly browned.
